🍛 Bhindi Fry (Bhindi Masala) Recipe

📝 Ingredients:

  • 250g Bhindi (Okra/Ladyfinger)

  • 2 tbsp Oil (mustard oil or any cooking oil)

  • 1 medium Onion (thinly sliced)

  • 1 medium Tomato (chopped)

  • 1–2 Green Chilies (slit)

  • 1/2 tsp Cumin Seeds

  • 1/4 tsp Turmeric Powder

  • 1 tsp Coriander Powder

  • 1/2 tsp Red Chili Powder (adjust to taste)

  • 1/2 tsp Garam Masala (optional)

  • Salt to taste

  • Lemon juice or Amchur (Dry Mango Powder) – optional, for tang


🔪 Preparation:

  1. Wash & Dry Bhindi: Rinse bhindi, wipe dry completely (important to avoid sliminess). Then chop into 1-inch pieces (slanted cuts work well).

  2. Sauté Bhindi:

    • Heat 1 tbsp oil in a pan.

    • Add chopped bhindi and sauté on medium heat for 7–10 mins till they lose their stickiness and become slightly crisp.

    • Remove and keep aside.

  3. Make the Masala:

    • In the same pan, add 1 tbsp oil.

    • Add cumin seeds, let them splutter.

    • Add sliced onions and green chilies, sauté till onions are golden brown.

    • Add tomatoes and cook until soft.

    • Add turmeric, coriander powder, chili powder, and salt. Cook the masala till oil separates.

  4. Combine:

    • Add sautéed bhindi to the masala.

    • Mix well and cook for 3–5 mins on low heat.

    • Sprinkle garam masala and optional lemon juice or amchur for extra flavor.

  • Always dry bhindi before chopping to reduce stickiness.

  • Avoid covering the pan while cooking bhindi to keep it from becoming slimy.

  • Can be served with roti, paratha, or even as a side with dal-chawal.
